Nelson’s Ghost Salami
Produced in Nelson’s village, containing a small amount of ghost chilli courtesy of local company ‘Norfolk Heatwave’ and a generous amount of garlic. The heat gently creeps upon your taste buds……..
Probably thought of as the most versatile salami, our Norfolk chorizo is packed full of Spanish smoked paprika & cayenne giving it a delicious flavour. Great for cooking with too; just add seafood!
Lomo is a classic Italian cured meat made from pork loin. We use a carefully blended spice mix inspired by Dutch speck, to include orange zest, mixed spices, cracked pepper & brown sugar. Thinly sliced, it makes an excellent addition to a charcuterie board.
Strips of beef topside, dry-cured in cracked black pepper, packed brown sugar, & coriander this flavour packed traditional South African snack is an ideal partner to an ice cold beer. Naturally low in fat & high in protein. Sharp knife required!

Air Dried Venison
Holk’ham’ haunch of fallow deer marinated in a wonderful blend of spices, to include orange zest, nutmeg, white pepper & juniper. Air-dried and finely sliced it makes a magical addition to a charcuterie platter or amazing wrapped around medjool dates as a canapé.
Fillet of venison dry cured in sea salt, brown sugar, toasted coriander & cracked black pepper. It melts in the mouth with a long lingering flavour.
