Pork & Olive Salami  

A perfect anti-pasti; red wine, garlic and black olives make this a best seller.


Saucisson Salami  

Based on a traditional French style saucisson. Red wine, freshly cracked black pepper & garlic. Perfect with a cheese board and a baguette. Just add sunshine!


Nelson’s Ghost Salami  

Produced in Nelson’s village, containing a small amount of ghost chilli courtesy of local company ‘Norfolk Heatwave’ and a generous amount of garlic. The heat gently creeps upon your taste buds……..


Norfolk Chorizo  

Probably thought of as the most versatile salami, our Norfolk chorizo is packed full of Spanish smoked paprika & cayenne giving it a delicious flavour. Great for cooking with too; just add seafood!


Norfolk Lomo  

Lomo is a classic Italian cured meat made from pork loin.  We use a carefully blended spice mix inspired by Dutch speck, to include orange zest, mixed spices, cracked pepper & brown sugar. Thinly sliced, it makes an excellent addition to a charcuterie board.


Strips of beef topside, dry-cured in cracked black pepper, packed brown sugar, & coriander this flavour packed traditional South African snack is an ideal partner to an ice cold beer. Naturally low in fat & high in protein. Sharp knife required!



Salmon cut of traditional breed beef; dry cured in a wonderful mix of aromatic spices, then dredged in red wine before air-drying. Thinly sliced, served on a platter with a drizzle of olive oil; it’s a beautiful thing!


Venison, Chilli & Cocoa Nib  

Perfect partners to venison, raw cocoa nibs and ground chilli flakes are mixed through to create a fusion of flavours.  


Venison, Orange & Juniper  

Venison, Fennel & Cracked Pepper – A more traditional venison salami, gently toasted fennel seeds & freshly cracked black pepper are mixed through along with some pork belly to add a little sweetness.


Venison, Fennel & Black Pepper  

Toasted fennel seeds & freshly cracked black pepper Holkham venison pack a great flavour combination. Delicious lightly griddled and served with goats cheese.


Air Dried Venison  

Holk’ham’ haunch of fallow deer marinated in a wonderful blend of spices, to include orange zest, nutmeg, white pepper & juniper. Air-dried and finely sliced it makes a magical addition to a charcuterie platter or amazing wrapped around medjool dates as a canapé.


Venison Strips  

Fillet of venison dry cured in sea salt, brown sugar, toasted coriander & cracked black pepper. It melts in the mouth with a long lingering flavour.
